In Christina Dymock's "The Healthy Family Slow Cooker Cookbook," the recipes range from simple to elegant and a little more complicated, but they all have one thing in common: they sound and look delicious from Pineapple Pork Chops (just mash the pineapple with the chops in a plastic bag, marinate and slow cook) to Bacon-Wrapped Chicken Fingers and Moo Shu Pork.

Moo Shu Pork
I dont remember how my kids got hooked on Chinese food, but one day they just fell in love and begged for it. To appease them, I cooked up this slow cooker version of Moo Shu Pork. They loved it, and I hope your family will too.
Serves: 12
4-5 hours on high or 7-8 hours on low
13 cup hoisin sauce
3 cloves garlic, minced
2 tablespoons dark Asian sesame oil
2 tablespoons less sodium soy sauce
1 tablespoon cornstarch
a dash of cinnamon
2 carrots, sliced thin
1 head of cabbage, sliced thin
1 pound boneless pork chops
2 cups broccoli heads
In a small bowl, combine the hoisin sauce, garlic, sesame oil, soy sauce, cornstarch and cinnamon. Set aside.
Spray the inside of a large slow cooker with nonstick cooking spray. Layer the carrots and cabbage in the slow cooker. Cut the pork chops into thin slices and place them on top of the cabbage. Add the broccoli.
Pour the sauce over the top and cover. Cook on high for 4-5 hours or low for 7-8 hours, or until the carrots are soft and the pork is cooked through.
