Dang it, Jim!

The Friday before Christmas we had a “treat your coworker day” — basically a food sharing day.  I expected a lavish spread of sweets, to which I was prepared to avoid.  I, of course, brought Paleo alternatives — good but not sweet.
Now, our veteran reporter Jim Misunas, like me, doesn’t do a lot of sweets either so we always look forward to what he is going to bring because, quite frankly, most of the stuff he brings is significantly above par. And you can trust me on that—I’m a world class food snob.
So what does he go and do!? He brings in his delicious, sumptuous chicken enchilada slow cooker casserole. It is spectacular….and of course NOT ON MY DIET! It has flour tortillas alternating with chicken, cheese and a rich sauce, bubbling and filling the office with its enticing aroma.
Now if your mouth isn’t watering, you have never had the pleasure of tasting this extravagance.  The smell alone is worth a couple pounds. So, I had to steel myself and hope everyone else in the office was really hungry so that the delectable, scrumptious crock pot of heaven would quickly be devoured before I lost my resolve. Fortunately, the office rose up to the challenge.
The rest of Christmas was pretty much worked out in advance, the traditional spaghetti and meatballs for Christmas Eve — minus the spaghetti, but plenty of sauce with a side of lettuce. Fortunately, it’s the sauce that is so good, chalk full of colored bell peppers, onions, mushrooms, sausage and meatballs, not to mention the tantalizing tastes of oregano, basil, garlic and fennel.  In fact, I think I could eat spaghetti sauce soup. Maybe I should work on creating that.
Christmas day there was a rib roast with roasted vegetables. I just had to make certain to stay away from the dessert trays; all and all, not too bad.
As my two-month Paleo commitment draws to a close, I’m thinking that maybe I will try it a little longer. I’m curious to see just how much it can impact my health. Will it continue to take me closer to my weight goal or will I plateau before I reach it? Will my blood work continue to be good or will this regime have a negative impact on it? Yes, I think it might not be a bad idea to see how it plays out, at least for a while.

I won’t claim to be an expert or a purist, but I would be happy to share what I know. Living a healthier life can be done, but it sure is a lot easier with all of your support.
